Golden Brown Pilau

Pilau can be tasking to cook especially if it comes out like brown or coloured rice, it’s discouraging. But that’s why I’m here! To show you how to took the best Pilau.

You’ll need a heavy sufuria.

Ingredients

  • Onions 3 large
  • Garlic cloves 4 large
  • Ginger
  • Tomato paste
  • Oil
  • Potatoes at least 5 large ones
  • Beef cubes( goat is preferred, it’s tender) 1/2 kg
  • Spices- beef masala, pilau masala, black paper, cloves, garam masala,chilli powder,bay leaves,cumin, jeera, cinnamon and cardamon
  • Rice- 1 cup rice
  • Water 2 cups water
  • Soy sauce 2 table spoons

Preparation

  1. Boil the goat meat a little make sure you add salt to it. 10 mins maximum.
  2. In another sufuria fry the onions…like this. Till the become very very golden. ..not burnt
  3. Add your beef and fry till golden too then add the garlic and ginger which is mashed into a paste.
  4. Add the peeled and sliced potatoes.
  5. Spice it up using the spices above. A teaspoon of each.
  6. Make sure the sufuria looks golden brown. We need that golden brown look in the outcome
  7. Add tomato paste- 1 table spoon and let it cook for 5 minutes by now your kitchen smells magical
  8. Add 2 cups of hot water-same size as the cup used to measure the rice. If not add 2 cups of cold or room temperature water and let it boil.
  9. When it has boiled, check it’s salt level. If it’s not to your liking add more salt. Add 1 cup of washed rice-same cup used to measure the amount of water.
  10. Let it cook until all the water is absorbed. Reduce the heat to minimum. At this point I add the cardamon of the rice then cover the sufuria with an aluminium foil.

Give it 15-20 minutes of simmer and once you switch the jiko off let your pilau settle. Serve it still hot with kachumbari. Just like I did!
